½cup pure maple syrup (not pancake syrup)
¼cup olive oil (divided)
1tbsp olive oil (for rubbing chicken)

2tbsp stone ground mustard

Grilling Method

Dry brine (optional but recommended)Sprinkle chicken thighs generously with kosher salt up to 24 hours ahead. Refrigerate uncovered. If short on time, season just before cooking.

Grill chicken (indirect heat)Pat chicken dry and rub with 1 tbsp olive oil. Place skin-side down over indirect heat. Cover and cook for 20–25 minutes, flipping once halfway, until internal temp reaches 120–130°F.

Glaze and crisp (direct heat)Move chicken to direct heat. Baste with sauce and grill 10 minutes, flipping and basting every minute, until internal temp reaches 165°F and skin is crisp and caramelized.
