There’s something so cozy about waking up to a warm, sweet breakfast that feels like a hug on a plate. This French toast casserole hits that note perfectly.

It’s custardy and soft without ever turning mushy, and the caramelized brown sugar streusel on top makes it feel straight out of a bakery. Whether you prep it the night before or whip it up the same morning, it’s always a crowd-pleaser.

Over the years, I’ve tested so many versions of French toast, and this casserole keeps me coming back. It’s ideal for holidays, family breakfasts, or those lazy weekend mornings when you want something indulgent but not fussy. Plus, it pairs wonderfully with crispy bacon, fresh fruit, or a drizzle of extra maple syrup.

Ingredients Needed for the Recipe

  • Challah bread – The foundation of this casserole. Slightly stale is best so it soaks up the custard without turning soggy.
  • Eggs – Bind the custard together, giving that rich, custardy texture everyone loves.
  • Milk – Combines with the eggs to create the base of the custard. Whole milk gives the best creaminess.
  • Maple syrup – Adds depth and sweetness to the custard, elevating the flavor beyond plain sugar.
  • Vanilla extract – Gives a warm, aromatic note that enhances every bite.
  • Cinnamon – The quintessential French toast spice, giving a subtle warmth throughout.
  • Butter – Melted into the custard for richness, and cold butter for the crumb topping to create that perfect crumble.
  • Light brown sugar – Sweetens and caramelizes the streusel topping, creating that bakery-like finish.
  • All-purpose flour – Combines with the brown sugar and butter for the streusel topping, giving structure and a tender crumb.

Choosing the Right Bread and Custard

Why Challah or Brioche Works Best

Not all breads are created equal when it comes to French toast casseroles. Dense, soft breads like challah or brioche absorb the custard beautifully while holding their shape. Avoid sandwich bread or anything too airy; they can turn mushy once baked.

How to Prepare Bread if It’s Fresh

If your bread is fresh, you don’t have to wait days for it to stale naturally. Simply cube it and toast it lightly in the oven for 5-10 minutes. This removes excess moisture, ensuring the custard is absorbed evenly without collapsing the bread.

Building the Perfect Custard

Mix your eggs, milk, maple syrup, vanilla, and cinnamon gently. Over-beating can create too many air bubbles, which may lead to uneven texture. A simple whisk until blended is ideal. This mixture is where your French toast gets that rich, flavorful custard body.

How to make French Toast Casserole?

Step 1 – Soak the Bread

Cut your challah or brioche into 1-inch cubes and place them in a buttered casserole dish. Pour the custard evenly over the top and gently stir to make sure all pieces are coated. Let it sit for 15-20 minutes so the bread absorbs the custard fully. This is the step that gives you that luxurious, custardy interior without sogginess.

Step 2 – Prepare the Streusel Topping

While the bread soaks, mix light brown sugar, flour, cinnamon, and cold butter. You can use a food processor for speed, but a pastry cutter works just as well. Pulse or cut until coarse crumbs form. The contrast of the buttery, sweet crumble with the soft custard is what makes this dish addictive.

Step 3 – Assemble the Casserole

Once the bread has soaked, evenly sprinkle the crumb topping over the surface. If you’re baking immediately, pop it straight in the oven. Otherwise, cover the casserole and the streusel separately, and refrigerate overnight. This makes it a perfect make-ahead breakfast for busy mornings or holiday gatherings.

Step 4 – Bake and Enjoy

Place your casserole on a foil-lined pan to catch any drips and bake until golden brown and mostly set, about 50 minutes. The edges should be slightly caramelized while the center stays custardy. Let it cool for a few minutes before serving so the custard sets slightly. Serve with extra maple syrup or fresh fruit if desired.

Serving & Presentation Ideas

Plating for Maximum Appeal

Cut the casserole into generous squares and serve on warm plates. A light dusting of powdered sugar adds a touch of elegance, or for a playful twist, top with fresh berries. This casserole isn’t just breakfast—it’s a centerpiece on the table.

Pairing With Other Breakfast Favorites

Crispy bacon or breakfast sausage complements the sweet, custardy casserole beautifully. A side of scrambled eggs adds a savory balance, while a dollop of whipped cream or a drizzle of extra maple syrup takes it over the top for a truly indulgent morning treat.

Tips

  • Prep ahead for convenience: Soak the bread the night before and refrigerate, making morning baking effortless.
  • Use slightly stale bread for the best texture. If fresh, toast lightly to remove moisture.
  • Keep butter cold for the streusel topping. This ensures a crumbly, caramelized finish rather than melting into the custard.
  • Don’t over-soak the bread. About 20 minutes is perfect; longer can make the casserole too dense.
  • Let the casserole rest for a few minutes after baking. This allows the custard to set slightly and makes cutting cleaner slices.
  • Experiment with toppings: berries, nuts, or a drizzle of chocolate can add a fun twist without overpowering the classic flavors.
  • Use a foil-lined pan for baking to catch any syrup overflow and make cleanup easier.
  • If you like extra flavor, add a pinch of nutmeg or a splash of cream in the custard—it complements the cinnamon and vanilla beautifully.

French toast casserole is truly one of those dishes that brings people together. The combination of soft, custardy bread and a crunchy, caramelized topping is irresistible. With just a bit of planning, you can have this ready for any occasion, whether it’s a weekend breakfast for two or a holiday brunch with the whole family. Every bite feels like a treat, and the best part? It’s surprisingly easy to make.

My little secret? A touch of maple syrup in the custard and a buttery streusel topping makes the flavor pop in a way that feels indulgent but not overwhelming. Trust me, once you try it, this casserole becomes a staple in your breakfast rotation, and everyone will be asking for seconds.

ingredients

TOPPING

Instructions

  1. Preheat oven to 375°F (190°C) and generously grease a 9×13 casserole dish (see note) with butter.
  2. Evenly layer Challah pieces into a deep 9×13 casserole dish. Set aside.
  3. Combine melted butter, maple syrup, vanilla extract, ground cinnamon, and salt in a large bowl and whisk until well-combined.
  4. Add sugars and eggs and whisk well.
  5. Add milk and heavy cream and whisk until all ingredients are well-combined.
  6. Pour mixture evenly over Challah pieces in casserole dish and use a spatula to stir gently so all pieces of bread are able to absorb the custard. Set aside while you prepare your topping.

TOPPING

  1. Combine flour, brown sugar, and ground cinnamon in the canister of a food processor and pulse briefly to combine (if you don’t have a food processor, just stir together in a medium-sized bowl).
  2. Scatter butter pieces evenly over flour mixture and pulse until sandy crumbs form (if no food processor — use a pastry cutter or fork and knife to cut butter into mixture until coarse crumbs form).

Assemble & Bake

  1. Let the casserole sit for 15-20 minutes or longer, until the bread has absorbed most of the custard. (See note if you would like to store the casserole to bake another day).
  2. Sprinkle casserole evenly with topping then place on a foil-lined baking sheet and transfer to center rack of 375°F (190°C) preheated oven. Bake for 50 minutes, until browned and mostly set, but center is still slightly jiggly when jostled.
  3. Serve warm, topped with additional maple syrup or whipped cream, if desired.

Frequently Asked Questions

Expand All:

Can I make this French toast casserole ahead of time?

Yes! Assemble the casserole (without topping), cover, and refrigerate overnight. Sprinkle the streusel topping just before baking in the morning.

What kind of bread should I use?

Challah is best because it’s both sturdy and rich, absorbing the custard without becoming mushy. Brioche is a great alternative. Avoid soft sandwich breads like white bread—they’ll turn soggy.

Why is my casserole soggy?

This usually happens if the bread is too fresh or too soft. Use slightly stale bread, or dry fresh cubes briefly in the oven. Also, ensure it bakes long enough—the center should be mostly set with just a slight jiggle.

Can I use a different milk?

Whole milk and heavy cream give the richest texture, but you can substitute with half-and-half or even full-fat coconut milk for a dairy-free version (results may vary slightly).
